Roasted Brussel Sprouts with Tart Cherries Recipe
1 lb Brussels sprouts, trimmed and quartered (remove any tough outer leaves) 1 Tbsp Extra Virgin olive oil 1/2 tsp sea salt Freshly cracked pepper 1/4 cup pine nuts, toasted 1/3-1/2 cup dried tart cherries
- Preheat oven to 375.
- Combine the first 4 ingredients on a baking sheet and mix well to combine.
- Roast in oven, stirring occasionally about 20 minutes, or until some Brussels sprouts are beginning to brown.
- Add tart charries and pine nuts, stir to combine, and return to oven for an additional 3-5 minutes.
- Remove from oven and allow to cool slightly. Enjoy!
